In our house, the saying goes: Sundays are for baking. Whether its cookies or cakes, I always get the need to knead on Sundays. This weekend was no different, but spotting some soft bananas in the fruit bowl, I knew it had to be banana bread, but I wanted to try something new, and what better way to improve an already popular recipe than by adding chocolate!
1 CUP PLAIN FLOUR
1/2 CUP COCOA
1/4 CUP MELTED BUTTER (UNSALTED)
1/4 CUP MELTED COCONUT OIL
3/4 CUP SUGAR
1 TSP VANILLA EXTRACT
1 TSP BAKING SODA
4 BROWN BANANAS
1 CUP CHOCOLATE CHIPS
Preheat oven to 375°F/190°C and grease a bread tin.
Gently mix the flour, sugar, cocoa and baking soda and set aside.
Mash 3 of the bananas, slicing the 4th one in half, saving one half for later- mash the second half. Whisk in the egg, vanilla extract, coconut oil and butter and mix into the dry ingredients.
Stir in the chocolate chips and pour mixture into the baking tin. Lay the remaining banana half on top of the mix and bake for 50 minutes.
