When a kickass Mama I follow on Instragram asked her followers what they’ll be having for breakfast on Christmas Day, I realised that I’ve probably had the same breakfast every Christmas: smoked salmon and scrambled eggs, preferably on sourdough toast and with a glass of orange juice that became a Mimosa in 2001.

Conscious that this is a Christmas of firsts, I thought I’d shake things up! Pancakes are our usual lazy Sunday breakfast, and I have no problem admitting that we’re a mix-from-a-box kinda family. These ready in minutes pancakes topped with everyone’s favourite seasonal spice, are going to be a sure fire hit come Christmas morning.


Store bought pancake mix

1/2 an apple per person

1 tsp butter per person

Whipped cream

2 tsp ground cinnamon per person

Core and thinly slice the apples do not peel them.

Make the pancake mix per the instructions, adding 1 of the 2 tsp per person and stir until thoroughly blended.

Melt the butter on a medium heat and add an apple slice, topping that with the pancake mix. Cook per the mix instructions.

Serve with whipped cream and sprinkle with cinnamon. Also good with caramel sauce!
