It’s not even Christmas yet and I’m already thinking about New Year’s Eve and what to serve for snacks and apps. We’ll also be celebrating our FIFTH wedding anniversary, so this New Year’s calls for more than plain old chips and dips.
Double cream brie, cranberry, and sweet Autumn Glory Apples make for a beautiful combination of flavors in these holiday appetizers, and they’ll make a beautiful addition to any Christmas or New Year’s Eve spread.
3 Autumn Glory Apples
1 double cream brie (8oz)
4 strips of smoked bacon
3 tablespoons cranberry sauce
1 tablespoon dried cranberries, chopped
3 sprigs of fresh thyme
Bring the brie to room temp, you’ll want it soft. Heat the cranberry sauce with 2 tablespoons water in a small pan on low heat for 5 minutes, stirring occasionally and remove from the heat.
Dice the bacon into 1/8-inch pieces and fry in a skillet until crispy, remove from the heat and discard any bacon fat.
Core and halve the apples, then cut into 1-inch pieces. Cut triangular chunks of the brie and assemble your skewers, alternating brie and apple, adding three pieces of each per skewer.
Drizzle the cranberry glaze on the skewers, sprinkle with the bacon crumbs, dried cranberries, fresh thyme, and serve!
