Surely there is no greater comfort than tucking in to a homemade baked good? Well, save for sharing it with family of course! In these trying times, baking is a great way to spend time with kids and adults alike, and as we hurtle towards warmer months, surely there is no greater comfort food than cheesecake?

The sour, grown up big sister to yogurt, quark is an exciting alternative to your go to morning snack, and like yogurt, comes in a wide variety of flavors. Wunder Creamery, now available through Green Bean is the ideal product for this sharp and sweet traditional käsekuchen. This spin on a German classic, also features Wholly Wholesome Organic Pie Shells.

Yield: 2 x 9 inch German Cheesecakes

Time: 20 minutes prep, 1h 30 minutes bake time, 2 hour chill time


2 x Wholly Wholesome Organic Pie Shells

6 tubs of Wunder Creamery Grass Fed Quark (Plain)

5 eggs, seperated

1 cup sugar

1 tbsp lemon juice

1 tbsp lemon zest (keep a pinch or two for decoration)

1 tsp vanilla extract

⅓ cup cream

2 tbsp all purpose flour


Blind bake the pie shells as per the instructions. While baking, whisk together the egg yolks and sugar, before adding the vanilla extract. Remove pie shells from the oven as directed. Heat oven to 350°F.

Stir in the lemon juice and ¾ of the lemon zest, followed by the quark and cream (for a lighter cheesecake, use full fat milk) and blend together until fully combined.

In a separate bowl, whisk (using an electric hand whisk) the egg whites until they form stiff, glossy peaks. Fold in the whisked whites to the quark/yolk blend. Do not stir! Use the flat side of a spatula to scoop the mixture from the edges of the bowl, before “writing” a J in the mix with the spatula.

Pour the mixture into the now cooled pie shells, and bake for 60-75 minutes until the surface of the cheesecake is solid. Do not remove from the oven immediately, wedge a wooden spoon into the door, switch off the oven and allow the cake to “overcook” in the cooling oven for 10-15 minutes.

Cool on a rack for an hour, before chilling it in the fridge for a final hour. Sprinkle with the remaining couple of pinches of lemon zest and serve.
